The first risotto of 2007 came into this world at around 3pm Eastern Standard Time. The happy parents named her 'Champagne'.
Haha, ok, so this is a Risotto blog, some of the time, so I thought it would be fun to make risotto for our first meal of 2007. This is Nigella's Champagne Risotto for Two from Feast. Apart from it being a regular type of risotto, the champagne is added at the time you would usually add wine in the beginning stage, and it was also a part of the 'stock' made up of champagne and chicken stock.
I didn't have leeks (the onion of choice), so I used spring onions. Still worked beautifully. A fab risotto; I urge you all to give it a go if by any chance you still have some sparkling wine or champagne hanging about -- you lushes!!
